However, there is no need to rush to abandon them. These fruits and vegetables contain an enzyme that can break down ascorbic acid. We are talking about ascorbate oxidase (this enzyme contains copper). It is she who has a destructive effect on vitamin C, which is valued for the ability to protect the human body from the penetration of certain pathogens, and also to strengthen the immune system. There is a lot of ascorbate oxidase in zucchini, cucumbers, grapes, apples, cauliflower. Nevertheless, according to Andrei Bobrovsky, Ph.D., nutritionist, associate professor of the Faculty of Medicine at St. Petersburg State University, fruits and vegetables, which contain high levels of ascorbate oxidase, have little effect on the breakdown of ascorbic acid. “This is happening, but, firstly, many methods of preparation destroy this enzyme, and secondly, inside the body, its influence is extremely weak,” the Russian expert said in an interview with Sputnik radio. Vitamin C is essential for most processes in the human body. But, as Bobrovsky assures, now it is quite rare to meet a person with a lack of ascorbic acid. Usually such people do not eat fruits, vegetables and herbs at all. "There are few such people, their shortage will be more connected not with the fact that they consume a lot of foods with ascorbate oxidase, but with the fact that they consume few foods with vitamin C," the nutritionist is sure. By the way, Russians were told about the dangers of vitamin C abuse. Photo: Depositphotos
