Nutritionist, Doctor of Medicine, Professor Alexey Kovalkov shared his expert opinion. In one of the videos on his YouTube channel, a nutritionist said that the usual way of cooking buckwheat, namely boiling, does not allow getting the maximum benefit from cereals. “The core of buckwheat contains carbohydrates. From boiled buckwheat, the entire core of the kernel crawls out when the stomach begins to crush it. As a result, carbohydrates very quickly enter the bloodstream, saturating it with sugar. This is bad. Because these carbohydrates will be absorbed in 20 minutes, the blood sugar level will drop in two to three hours, and you will want to eat again,”Kovalkov explained. He advised to brew the cereal with water or kefir - in this case, the kernels of the cereal will remain solid, and the body will need more time to digest the shell. Carbohydrates will enter the bloodstream very slowly. The doctor recalled that, although buckwheat is considered a useful product, you should not include it in the diet every day - three times a week is enough. Meals should be varied. Earlier, Dr. Kovalkov named two really healthy cereals.
